Ed’s Letter

It continues to be so important to support and celebrate the West Country’s food and drink industry in the challenging environment we all still face. This year, our latest A Taste of the West Country recipe book has been exceptionally popular, with a record number of businesses wanting to take part – a testament to how proud the industry is of its outstanding efforts and achievements.

Now, more than ever, there is a continued focus on reduced food miles, sustainability, product traceability and welfare standards for those working in the food industry and also for consumers. Many of the producers who feature in this book offer field-to-fork schemes, while the restaurants increasingly rely on their own kitchen gardens for ultra-local produce, or look to their neighbouring towns and villages to help with supply.

Every year, there are hundreds of entries into the coveted Taste of the West Awards. This latest edition of A Taste of the West Country is a pairing of the award-winning chefs and producers from Cornwall, Devon, Somerset, Dorset and Wiltshire to bring you special recipes using the finest local ingredients.

The dishes are created exclusively for this book by the chefs featured in these pages. With produce readily available around the region, our clear layout and simple steps make it easy to create restaurant-style dishes at home for your friends and family.

By following these recipes, not only will you impress your guests but you’ll also be supporting our food and drink industry; something I think we all feel is vital right now.
